Our client is now recruiting for a Director of F&B

Duties and Responsibilities

• Menu engineering, designing menus, purchase goods/food items and continuously make necessary improvements
• Apply all methods such as food costing, recipes, work schedules and price analysis with direct and indirect competitors
• Establish targets, KPI’s, schedules, policies and procedures
• Lead F&B team by attracting, recruiting, training and appraising talented personnel
• Manage all F&B and day-to-day operations within budgeted guidelines and to the highest standards
• Manage banqueting events, potential weddings and parties
• Preserve excellent levels of internal and external customer service
• Identify customers’ needs and respond proactively to all of their concerns
• Comply with all health and safety regulations
• Provide a two way communication and nurture an ownership environment with emphasis in motivation and teamwork
• Report on management regarding sales results and productivity
• International cuisine (western dishes mainly)
• Preferably experience with Mediterranean cuisine does not have to be specialized
• Train and manage staff
• Managing Banquet, Wedding, and other events
• Planning pricing strategies
• Generating revenues
• Managing a team of 30 people reporting directly to him
• There will be additional casuals on the high season as well. This number to increase accordingly to the season.
• Must have food experience with a background of working in a Hotel or Beach Club/Restaurants
• Should be a social and outgoing individual with great hospitality etiquettes since it is leisure resort
• Managing restaurants across all timings i.e. Breakfast, Lunch and Dinner and the Buffet used for events as well
• Purchasing and finding items required for the restaurant and resort
• Must be good with calculations, numbers, and documentation
• Should have a hotel background and knows how to deal with other departments such as rooms (room service), dive (special food items for dive trips), etc…
• A highly cooperative individual
• GCC Experience is a must.
